Ukrainian Cornmeal Mush (Kulesha)

  1. Mix cornmeal and water into a paste.
  2. Heat until boiling in a nonstick saucepan (be careful not to scorch).
  3. Add salt and sugar.
  4. Reduce heat to low and mix with wooden spoon.
  5. Cover and cook 30 minutes, mix again, and cook another 30 minutes.
  6. Stir and remove from heat, continuing to stir.
  7. Beat in bacon grease (for a little smoked flavor).
  8. Serve as an accompaniment to meats, or store in refrigerator until needed.
  9. Reheat in an oiled skillet and steam, covered, until hot.
