Aubergine Salad With Mayonnaise Recipe

• 1 med Aubergine
• 1/2 c. (or possibly more) mayonnaise
• 6 x Cloves garlic
• 1 med Onion
• 1/2 tsp Salt
• 1/4 c. Lemon juice

1. Bake aubergine in oven.
2. When skin is charred and aubergine is tender, peel and place in blender with remaining ingredients.
3. Whip till blended.
4. Correct seasoning to taste.
5. Serve as a dip, or possibly on crackers.
