Grilled Chicken on Flat Bread
- 2 Marinated And Grilled Chicken Breasts
- 2 cups Shredded Lettuce
- 2 cups Shredded Colby-jack Cheese
- 1 Ripe Tomato, Diced
- 1 Ripe Avocado, Sliced Into Wedges
- 4 Flat Breads
- Olive Oil, To Brush On Flat Breads
- 1/2 cups Buttermilk Ranch Dressing, Or 2 Tablespoons For Each Flat Bread
- Dash Of Pepper To Add Color And Flavor When You Build Your Flat Bread
- Marinate your chicken ahead of time with your favorite marinade.
- (I used McCormicks Backyard Brew and let my chicken marinate for 3 hours.)
- I also make my ranch dressing ahead of time so it can have time to chill.
- You will use this as one of the toppings when you assemble your flat bread.
- Grill the marinated chicken breasts.
- While your hubby is grilling, prepare the rest of your ingredients.
- Finely slice lettuce so it is thin shreds.
- Dice the tomato.
- Slice your avocado into wedges.
- Grate your cheesefreshly shredded always tastes better.
- When your chicken is grilled to perfection, dice the chicken into bite size pieces.
- Brush both sides of your flat bread with olive oil and warm to golden on a cast iron griddle if you have one (or use what you have).
- Build your flat bread in the following order: flat bread, chicken, lettuce, ranch dressing, cheese, tomato, avocado, and lastly a shake of pepper for color and flavor!
- Fold the sides up like a soft taco, and take a big bite!
- Serve buffet style and enjoy!
- This is a fast and easy recipe, as well as a healthy meal!
