Mini Polka Dot Cheesecakes
- 500g block PHILADELPHIA Cream Cheese, softened
- 1/2 cup caster sugar
- 2 eggs, lightly beaten
- 1 1/2 tablespoons cornflour
- 200g white chocolate melts, melted
- 150g (3/4 cup) milk chocolate chips
- Garnish
- 1 punnet strawberries, pureed and strained Safeway 1 lb For $3.99 thru 02/09
- 400g can mango in light syrup, drained and pureed
- Beat Philly* and sugar until smooth.
- Fold in remaining ingredients.
- Pour into a parchment line 12-hole, 1/2 cup capacity, non-stick muffin pan.
- Bake 25-30 minutes at 160C oven.
- Stand for 5 minutes before turning out.
- Cool for 30 minutes before serving.
- Place muffins on serving plate, serve drizzled with strawberry and mango puree.
