Chicken Scampi with Broccoli

  1. In a large bowl, combine, flour, parmesan cheese, italian seasoning and pepper, add salt to taste.
  2. Toss chicken in mixture just to dry chicken and provide a seasoned surface.
  3. Heat olive oil in a large skillet, sear chicken pieces about 3 to 4 minutes on each side, until golden and cooked through, remove as done to a plate and cover with foil to keep warm.
  4. Into skillet, add onion and chilis , adding more oil if needed, soften for about 5 minutes, add garlic,and wine and bring to a boil scraping up bits in pan.
  5. When wine is almost gone add broth, cream, hot saice and lemon, boil until a light sauce forms, add broccoi and heat, turn heat to low add cheese and butter to melt.
  6. Remove from heat.
  7. On a platter toss pasta with some sauce, top with chicken, add remaining sauce and serve.
  8. Garnish with more parmesan cheese to taste and fresh herbs.
