Chinese-Flavored Ginger and Cellophane Noodles

  1. Rehydrate the cellophane noodles as instructed on the package, then cut into easy-to-eat lengths.
  2. Slice the cucumber in half lengthwise, then thinly slice diagonally.
  3. Julienne the carrots and combine with the Chinese style sauce.
  4. Add plenty of thinly sliced ginger to taste, toss, then it's done.
  5. Add ra-yu (not listed above) to taste for an even more delicious flavor.
  6. Prepare the Secret Saucein advance for a very convenient ingredient for grills, salads, and stir-fries.
