Avery Island Tabasco Country Marinade Recipe
- 1/2 c. dry white wine
- 1/4 c. white wine vinegar
- 2 Tbsp. red or possibly green tabasco or possibly other warm pepper sauce
- 1 Tbsp. vegetable oil
- 1 Tbsp. honey
- 1 tsp dry thyme
- 1/2 tsp grnd cumin
- 1/4 c. minced green onion
- 2 x cloves garlic peeled, ends removed, chopped
- In a small bowl, whisk together the wine, vinegar, Tabasco sauce, oil, honey, thyme and cumin.
- Stir in the green onions and garlic.
- Place meat or possibly poultry in a shallow glass dish and add in the marinade, turning to coat.
- Cover and chill, turning occasionally, 2 to 4 hrs for beef or possibly pork and 1 to 2 hrs for poultry.
- Or possibly place meat and marinade in a heavy-duty, sealable plastic bag, squeeze out air, close tightly and chill as above.
- About 1 1/4 c., sufficient to marinate 1 1/2 pounds of steak or possibly pork tenderloin, 2 pounds bone-in chicken thighs or possibly drumsticks, or possibly 1 1/2 pounds turkey steaks
