Dixie Pineapple Beans
- 14 cup light molasses
- 14 teaspoon ground cinnamon
- 14 teaspoon ground ginger
- 18 teaspoon ground nutmeg
- 12 teaspoon salt
- 2 (16 ounce) cansvegetarian beans
- 1 (8 ounce) can pineapple chunks
- 2 tablespoons pineapple juice
- 12 teaspoon lemon juice
- 12 cup pecans, chopped
- 1 tablespoon light molasses
- 1 tablespoon butter, melted
- Combine 1/4 cup molasses, cinnamon, ginger, nutmeg and salt in a 1 1/2 quart casserole.
- Add beans, pineapple, pineapple juice, lemon juice and 1/4 cup of the pecans.
- Mix well.
- In cup, combine remaining pecans, 1 tablespoons molasses and butter).
- Spoon around edge of beans (optional).
- Bake at 350 degrees for 40-45 minutes or until beans are bubbly.
