Roasted Fruit

  1. Preheat the oven to 400F.
  2. With a fork, prick the skins of the peaches, plums, and nectarines.
  3. Halve each fruit, and remove the pits.
  4. Halve the fruit again.
  5. In a roasting pan, toss the fruit with the rosemary, sugar, butter, and lime juice.
  6. Roast, tossing occasionally, until the fruit is fork-tender, 15 to 20 minutes.
  7. Serve warm over vanilla ice cream or frozen yogurt, if desired, and drizzle the pan juices over the top.
