Polenta Parmesan
- 1 whole Tube Of Polenta, 18 Ounce Tube
- 1 whole Egg, Beaten
- 3/4 cups Breadcrumbs
- 1 cup Tomato Sauce
- 1/2 cups Shredded Cheese, Mozzarella Or Parmesan
- 2 Tablespoons Cooking Oil
- 1.
- Heat oil on the stovetop over medium heat to get read for frying.
- 2.
- Slice the polenta into rounds.
- Put your beaten egg in one bowl and your breadcrumbs in another bowl.
- Dredge the polenta rounds in the egg wash and then into the breadcrumbs.
- Place in the oil.
- Turn once the bottom of the polenta round begins to heat and brown on the bottom side.
- After the round has been entirely browned on both sides, place on a cookie sheet (mine was covered in foil with some baking spray.)
- Repeat with remaining polenta rounds.
- 3.
- After all of the polenta is on the cookie sheet, top with a spoonful of pasta sauce or tomato sauce and some cheese.
- Place under the broiler (on high) for a minute or two.
- These are definitely best served warm.
