Savory Bacon Muffins

  1. Heat oven to 375F Grease a 12-cup muffin pan; set aside.
  2. In medium bowl, whisk together flours, baking powder, baking soda and salt.
  3. Make well in center and set aside.
  4. In separate bowl, combine honey, eggs, buttermilk and butter.
  5. Stir in sour cream.
  6. Add to flour mixture all at once and stir.
  7. Fold in onions and bacon.
  8. Divide evenly into prepared muffin pan and bake for 20 minutes, or until toothpick inserted in center comes out clean.
  9. Cool for 5 minutes.
  10. Serve muffins with butter and honey, if desired.
  11. Yields 12 muffins.
