Watermelon Spice Pie Recipe
- 1 1/2-2 c. white of rind of watermelon, minced
- 1 teaspoon cinnamon
- 1/4 teaspoon cloves
- 2 tbsp. flour
- 1/2 c. raisins
- 1 c. sugar
- 1/8 teaspoon nutmeg
- 1/8 teaspoon salt
- 1/4 c. vinegar
- 1/2 c. nuts
- Pie shell
- Combine watermelon rinds with just sufficient water to cover and bring to a boil.
- Simmer till tender and drain.
- Add in the rest of the ingredients.
- Pour into a pie shell.
- Bake at 450 degrees till brown.
- Reduce heat to 350 degrees till filling is set like pumpkin pie.
- Top with Cold Whip.
