Pan Granjero! (Bacon and cheese bread)
- 1 kg wheat flour
- 30 grams active dry yeast
- 40 grams brown sugar
- 3 tsp salt
- 250 grams Paisa white cheese (anoher white cheese can be optional)
- 300 grams butter
- 400 ml fresh milk
- 4 slice fried bacon
- 5 egg yolks
- 5 egg whites well mixed
- 20 ml bacon oil (after fried bacon) reserve*
- Add the flour , brown sugar ,slice bacon well chopped in little pieces and mix.
- Add egg yolk, egg white mixed, batter, add active dry yeast , fresh milk (Do not add hot milk, can kill the yeast) ,then batter and knead the dough.
- Add more flour is it's need it
- Pull the dough out of the pot or container and then knead it with the white cheese grated, add more flour to keep dry , knead dough again with the butter and salt.
- Add more flour if it is optional to keep the dough fresh and dry.
- Knead the dought 5 min, let rest 10 min, knead the dough again intense for 2 min, put the dough in some place warm, let rest and ferment for 3 hour !.
- Take the dough fermented, deflate, cut the dough in 100gr each piece.
- Smash the cutted dough, knead it, bowl and reserve in a tray; Repeat the process until finish all the cutted doughs.
- Varnish all the doughs with the bacon oil, cover the tray and let rest for 1 more hour to grow.
- Heat the oven 155F - 310 Fahrenheit.
- Put the trays with the doughs inside the oven for 22 min or when it gets brown on the cover.
- Draw the the trays with doughs and let them rest for 5 min cover until stay fresh.
