Limoncello Chutney Chicken
- 1 lb boneless skinless chicken breast
- 1 (14 ounce) can whole berry cranberry sauce
- 14 cup wine vinegar
- 14 cup limoncello (lemon liqueur)
- 14 cup minced onion
- salt and pepper
- fresh thyme
- Cut 1 lb.
- boneless, skinless chicken breasts into very thin strips.
- Thread onto small skewers that have been soaked in water, placing one strip onto each skewer.
- Stir together 1 (14-oz.)
- can whole berry cranberry sauce, 1/4 cup each: wine vinegar, limoncello (lemon liqueur) and minced onion and 1/4 teaspoons each: salt and pepper in a small saucepan.
- Bring to a boil; reduce heat and simmer, covered, for 30 minutes.
- Place half the mixture in a decorative bowl.
- Broil chicken skewers until nicely charred on both sides, brushing liberally with remaining chutney mixture during the last few minutes of cooking.
- Sprinkle with snipped fresh thyme and serve with reserved sauce.
