Tex Mex Fish Tacos.....AWESOME

  1. Attached recipe, half the recipe for the four tacos.
  2. Start by preparing tilapia.
  3. Zest the lime, set aside zest.
  4. While fish is baking, cut pepper into thin slices or julienne cuts.
  5. Saute peppers with juice of the lime for one minute.
  6. I want to keep some snap to the peppers and not have them soft.
  7. Heat up beans with spices added.
  8. Heat up tortillas.
  9. Once fish is done start assembling.
  10. Cut each fish fillet into two pieces, cutting lengthwise.
  11. Cut avocado in half.
  12. Slice lengthwise and scoop out.
  13. Do this step right before assembling so avocado doesn't turn brown.
  14. Place fish into tortilla.
  15. Then add some beans, top with peppers, avocado, cilantro leaves and top it all off with sour cream.
  16. I just wash and dry cilantro and pull off leaves.
