Almond Snowcap Cookies Recipe

  1. In bowl, cream margarine and powdered sugar till light.
  2. Blend in flour.
  3. Press proportionately over bottom of a 9 x 13 inch pan.
  4. Bake at 350 degrees for 12 -16 min, till set.
  5. Spread jam over warm baked crust.
  6. In bowl, beat egg whites till foamy.
  7. Continue to beat, adding granulated sugar, 1 Tbsp.
  8. at a time till egg whites form soft peaks and are glossy.
  9. Mix in 1/2 c. nuts.
  10. Spread over jam layer.
  11. Sprinkle with remaining nuts and coconut.
  12. Bake at 350 degrees.
  13. Cold and cut into bars.
  14. Makes 24 bars
