Almond Snowcap Cookies Recipe
- 3/4 c. Margarine softened
- 3/4 c. Powdered sugar
- 1 1/2 c. Flour
- 3/4 c. Raspberry jam
- 3 x Egg whites
- 3/4 c. Sugar
- 1 c. Sliced almonds
- 1/2 c. Shredded coconut
- In bowl, cream margarine and powdered sugar till light.
- Blend in flour.
- Press proportionately over bottom of a 9 x 13 inch pan.
- Bake at 350 degrees for 12 -16 min, till set.
- Spread jam over warm baked crust.
- In bowl, beat egg whites till foamy.
- Continue to beat, adding granulated sugar, 1 Tbsp.
- at a time till egg whites form soft peaks and are glossy.
- Mix in 1/2 c. nuts.
- Spread over jam layer.
- Sprinkle with remaining nuts and coconut.
- Bake at 350 degrees.
- Cold and cut into bars.
- Makes 24 bars
