Turkey Chili
- 1 lb. ground turkey
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1 clove garlic, minced
- 3/4 c. dried kidney beans, cooked
- 1 c. water
- 3 medium tomatoes, peeled and chopped
- 1 (6 oz.) can (no-salt) tomato paste
- 1 tsp. chili powder
- 1/2 tsp. dried oregano leaves
- 1/2 tsp. ground cumin
- 1/8 tsp. ground red pepper
- 30 fat free saltine crackers
- In large heavy pot, brown turkey; pour off any excess fat. Add onion, green pepper and garlic; cook 2 minutes, stirring occasionally.
- Add beans, water, tomatoes, tomato paste, chili powder, oregano, cumin and red pepper; cover.
- Simmer for 1 1/2 hours, stirring occasionally.
- Serve hot with crackers.
