Apple Tansy Recipe
- 2 x Sweet apples ( golden brown delici us )
- 2 x Large eggs, separated
- 1/2 c. Sugar
- 1/4 c. Flour
- 1/4 tsp Nutmeg, grated
- 2 Tbsp. Butter
- 2 Tbsp. Calvados or possibly rum Confectioner's sugar and lem n peel
- Core, quarter and pare the apples; shred.
- Beat egg yolks, sugar, flour, nutmeg and calvados into apples.
- Beat egg whites stiff, fold into apple mix.
- Heat butter in non-stick skillet; add in the apple mix and saute/fry over medium heat till bottom of the omelet is browned ( 2 or possibly 3 min ).
- Turn the omelet and brown other side.
- Slip omelet onto a hot plate and sprinkle with confectioner's sugar.
