Baked Stuffed Brook Trout Meuniere Recipe

  1. Heat half the butter in a skillet; cook the onion in it 5 min.
  2. Add in the mushrooms and cook 5 min longer.
  3. Fold in the parsley, crackers, 1 tsp.
  4. salt, 1/4 tsp.
  5. pepper and the thyme.
  6. Split the trout for stuffing and stuff with the prepared mix; sew the openings.
  7. Mix the flour with the remaining salt and pepper; roll the trout in it.
  8. Heat the remaining butter in skillet; cook the trout in it over low heat, turning till browned on all sides.
  9. Bake 20 min in 350 degree oven.
  10. To serve, sprinkle with the lemon juice.
  11. Serves 4.
