Baked Stuffed Brook Trout Meuniere Recipe
- 1/4 lb Butter
- 1/2 c. Chopped onion
- 1/2 lb Mushrooms sliced
- 1 Tbsp. Chopped parsley
- 2 c. Coarsely crushed soda crackers
- 3 tsp Salt
- 1/2 tsp Pepper
- 1/8 tsp Thyme
- 4 x Brook trout
- 1/2 c. Flour
- 2 Tbsp. Lemon juice
- Heat half the butter in a skillet; cook the onion in it 5 min.
- Add in the mushrooms and cook 5 min longer.
- Fold in the parsley, crackers, 1 tsp.
- salt, 1/4 tsp.
- pepper and the thyme.
- Split the trout for stuffing and stuff with the prepared mix; sew the openings.
- Mix the flour with the remaining salt and pepper; roll the trout in it.
- Heat the remaining butter in skillet; cook the trout in it over low heat, turning till browned on all sides.
- Bake 20 min in 350 degree oven.
- To serve, sprinkle with the lemon juice.
- Serves 4.
