Polish Beet Soup Recipe

  1. Put first 4 ingredients in large kettle; cover with water and bring to boil.
  2. Simmer 45 min.
  3. Add in peeled, shredded beets, tops, and stems; let come to boil.
  4. Add in 2 Tbsp.
  5. vinegar and salt.
  6. Cook another hour till ribs are tender.
  7. Cook potatoes separately and add in just before serving.
  8. Top with lowfat sour cream on each bowl.
