Asian Ginger Cucumbers Recipe

  1. Salt cucumbers and allow to sit for 1 hour.
  2. Rinse thoroughly under cool water and pat dry.
  3. Place in a bowl and reserve.
  4. In a small saucepan, heat together the ginger, vinegar, sugar, water and oil.
  5. Bring to a boil, then pour over cucumbers.
  6. Marinate at least overnight.
  7. To serve, garnish with toasted sesame seeds.
  8. Variation: For a spicier flavor, add in 1/2-1 tsp.
  9. of warm chili flakes to the marinade.
  10. Yield: 6-8 servings
