Kale and eggs
- 2 cup kale
- 3 eggs
- 2 tbsp almond milk
- 2 tbsp evoo
- 1 salt
- 1 black pepper
- 1 mango habanero salsa (optional)
- Wash and remove stems off the kale
- Beat eggs with almond milk
- Heat pan on stove with evoo then add kale, stir, cover and let cook for 2:min on med heat
- Push kale to the side and add egg mixture, salt and pepper to taste
- Stir around until fully cooked then put on plate and it's ready to serve
- I add my habanero mango salsa but that's me, enjoy
