Molded Beet Salad Recipe
- 1 can sliced beets
- 1 (3 ounce.) pkg. lemon-flavored gelatin
- 3 tbsp. vinegar
- 1/2 teaspoon salt
- 3/4 c. diced celery
- 2 tbsp. prepared horseradish
- 1 tbsp. chopped onion
- Drain beets, reserving liquid.
- Dice beets, set aside.
- Add in water to beet liquid to make 1 1/2 c., heat to boil.
- Add in gelatin, stir till dissolved.
- Add in vinegar and salt.
- Refrigeratetill partially set.
- Stir in beets, celery, horseradish and onion.
- Pour into 10x6x2 inch baking dish.
- Refrigeratetill set.
- Serve on lettuce and top with mayonnaise.
