Green Pepper Casserole Recipe
- 4-5 green peppers, minced
- 1 tbsp. butter
- 2 tbsp. flour
- 1 c. lowfat milk
- 3/4 c. grated cheese
- 1/2 c. cracker crumbs
- Cook green pepper in small amount of water till tender.
- Heat butter in saucepan and blend in flour.
- Add in lowfat milk gradually.
- Cook and stir till thickened.
- Add in cheese and stir till melted.
- Stir in peppers.
- Pour into baking dish, cover with cracker crumbs.
- Bake at 350 degrees till bubbly and brown.
- 5-6 servings.
