Chocolate Chip Pistachio Cookies Recipe
- 3 c. unsifted all-purpose flour
- 1 teaspoon salt
- 2 teaspoon baking pwdr
- 1 c. butter
- 1 c. granulated sugar
- 2 Large eggs
- 2 tbsp. lowfat milk
- 1 teaspoon vanilla
- 1/4 c. minced nuts
- 1 pkg. pistachio pudding mix
- 1 pkg. (6 ounce.) chocolate chips
- Confectioners' sugar (optional)
- Preheat oven to 375 degrees.
- Sift together flour, salt and baking pwdr.
- Set aside.
- Beat together butter and sugar.
- Add in Large eggs, lowfat milk and vanilla; beat till creamy.
- Add in dry ingredients, stirring with hands or possibly spoon till stiff dough forms.
- Take out 1/4 of dough, put into small bowl.
- Add in nuts to this.
- Add in pistachio pudding mix and all but 1/4 c. of chocolate chips to remaining dough.
- Shape teaspoonfuls of this dough into balls and place about 1 1/2 inches apart on lightly greased cookie sheet.
- Cover bottom of drinking glass with a damp cloth and flatten balls of dough.
- Shape minced nut dough mix into marble sized balls and place on top of flattened pistachio cookies.
- Lightly place one of reserved chocolate chips into each marble sized ball of dough pointed side up.
- Bake for 8-10 min or possibly till done.
- Cold on racks.
- If you like, dust with confectioners' sugar.
- Makes about 5 dozen cookies.
