Carrot Rolls
- 8 cups sliced carrots
- 3 cups fresh breadcrumbs
- 2 cups cheddar cheese, shredded
- salt, black pepper, and ground nutmeg to taste
- 2 egg whites
- 1 cup corn flakes, crushed
- fresh parsley sprig
- Preheat oven to 350F.
- Steam carrots for about 10 minutes or until soft.
- Drain and mash well.
- Add breadcrumbs, cheese and seasonings.
- Beat egg whites until stiff; fold into carrot mixrture.
- Shape mixture into 24 rolls that are each about 2-inches long.
- Roll in crushed cornflakes.
- Place on a nonstick or lightly greased baking sheet.
- bake in preheated oven for about 20 minutes, or until browned.
- Makes 24 rolls ro 12 servings.
