Carrot Rolls

  1. Preheat oven to 350F.
  2. Steam carrots for about 10 minutes or until soft.
  3. Drain and mash well.
  4. Add breadcrumbs, cheese and seasonings.
  5. Beat egg whites until stiff; fold into carrot mixrture.
  6. Shape mixture into 24 rolls that are each about 2-inches long.
  7. Roll in crushed cornflakes.
  8. Place on a nonstick or lightly greased baking sheet.
  9. bake in preheated oven for about 20 minutes, or until browned.
  10. Makes 24 rolls ro 12 servings.
