Double-Chocolate Key Lime Cookies

  1. Preheat oven to 350.
  2. In a mixer, combine butter and sugars, beat until smooth and creamy.
  3. Add egg, then Key lime juice.
  4. Scrape down bowl.
  5. Add dry ingredients slowly, making sure that all the ingredients are just incorporated.
  6. Do not over-mix batter.
  7. Stir in chocolate chips.
  8. Place cookie dough in freezer for 1/2 hour (or more), this will help the cookies stay chunky and not spread out.
  9. Use an ice cream scoop to scoop dough onto a nonstick cookie sheet.
  10. Bake for about 15 minutes or until lightly golden brown.
  11. Cool on wire racks.
  12. Cookies will be good for 3 days in an airtight container.
