Curry Chicken and/or Tuna Salad - Curried chicken rice salad

  1. Combine soup mix and water and bring to a boil.
  2. Add rice and return to boil.
  3. Reduce heat and simmer for ten minutes.
  4. Stir to fluff.
  5. Cover and Remove from heat.
  6. Let stand for twenty minutes then add remaining ingredients.
  7. Chill overnight.
  8. Serve with rings of fresh pineapple.
