Chicken Corn Casserole Recipe
- 1/3 c. butter
- 1/3 c. flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon celery salt
- 1/4 c. bread crumbs
- 2 c. lowfat milk
- 2 c. cooked chicken, deboned & cut up
- 1 pound can corn, liquid removed (I use Green Giant frzn can)
- Heat butter over low heat; stir in flour and seasonings; cook till smooth and bubbly.
- Remove from heat and blend in lowfat milk, then cook to a boil for 1 minute.
- Combine sauce, chicken and corn.
- Pour into 1 1/2 qt casserole greased with butter.
- Top with crumbs and dot with butter.
- Bake 30 min at 350 degrees.
- Serves 6 (can be doubled).
