The Best Pancakes
- 2 tablespoons canola oil
- 1 egg
- 1 cup 1% low-fat milk
- 1 cup whole wheat flour
- 2 tablespoons baking powder
- 2 tablespoons sugar
- 12 teaspoon salt
- In a large bowl, beat together oil, egg and milk.
- In another bowl, sift together flour, baking powder, sugar and salt.
- Add dry ingredients to liquid ingredients, blending well.
- Stir in 1 additional tablespoon of milk.
- Fry on lightly oiled griddle.
