My Easy and Simple Ratatouille with Pasta
- 1 package (16 Oz. Package) Pasta Of Your Choice (i Used Farfalle)
- 2 Tablespoons Olive Oil
- 3 cloves Garlic, Minced
- 2 whole Small Zucchini, 1-inch Dice
- 1 whole White Onion, 1-inch Dice
- 1 can (15 Oz. Can) Stewed Tomatoes
- 2 dashes Salt And Pepper
- 1 dash Chopped Parsley (as Much As You Like)
- Cook pasta until tender.
- Keep warm and set aside.
- (Ratatouille is so good on its own, so if you dont want the carbs, then cut the evil pasta out!)
- Heat a skillet or large pan over medium high heat and then add the olive oil, garlic, zucchini and onions.
- Toss AGGRESSIVELY (just kidding, kinda) for about 5 minutes, then you can add the lovely tomatoes, dashes of salt and pepper and then a handful of chopped parsley.
- Turn down the heat and simmer for about 7 minutes or so!
