My Easy and Simple Ratatouille with Pasta

  1. Cook pasta until tender.
  2. Keep warm and set aside.
  3. (Ratatouille is so good on its own, so if you dont want the carbs, then cut the evil pasta out!)
  4. Heat a skillet or large pan over medium high heat and then add the olive oil, garlic, zucchini and onions.
  5. Toss AGGRESSIVELY (just kidding, kinda) for about 5 minutes, then you can add the lovely tomatoes, dashes of salt and pepper and then a handful of chopped parsley.
  6. Turn down the heat and simmer for about 7 minutes or so!
