Cranberry Glazed Pork Roast

  1. In small saucepan, combine cornstarch, cinnamon, salt, and orange zest
  2. Stir in orange juice, sherry, and cranberry sauce.
  3. Cook stirring overmedium heat until thickened.
  4. Set aside
  5. Place roast in shallow roasting pan.
  6. Insert meat thermometer.
  7. Roast at 325F for 1 hour.
  8. Place onion around pork.
  9. Spoon about 1/2 cup cranberry mixture over roast and onions.
  10. Roast 30 to 60 minutes or until thermometer registers 160F.
  11. Let stand 10 minutes before slicing.
  12. Serve with remaining cranberry mixture
