Coconut Apricot Sorbet

  1. Place the sugar and boiling water in a medium bowl and stir until the sugar has dissolved.
  2. Add the coconut milk and apricot juice and stir to combine.
  3. Cover and refrigerate until it reaches 40F, about 3 hours.
  4. Add the coconut and stir well.
  5. Transfer to an ice cream maker and proceed according to the manufacturers instructions.
