Cocoa Cottage Cheesecake

  1. Heat oven to 350F.
  2. Stir together finely crushed vanilla wafer cookies, 1 Tbsp cocoa powder and 1 Tbsp melted butter.
  3. Press onto bottom of 8-inch springform pan.
  4. Bake 5 minutes or until set.
  5. Cool completely on wire rack.
  6. Place cottage cheese in a food processor or blender; process until smooth.
  7. Stir together cocoa, sugar and gelatin in saucepan; stir in 1/2 cup milk.
  8. Let stand 5 minutes to soften gelatin.
  9. Cook over medium heat, stirring constantly, until gelatin is completely dissolved; remove from heat.
  10. Add gelatin mixture and vanilla to cottage cheese in food processor; blend well.
  11. Pour onto crust and refrigerate for 4 hours.
