butternut & carrot soup
- 1 butternut squash
- 2 carrots
- 2 garlic cloves
- 1 stock cube
- 1 dash salt
- 1 dash black pepper
- 1 dried mixed herbs
- 1/2 dried parsley
- 3 onions
- chop all the vegetables & garlic, place in a saucepan.
- make up a litre of stock with stock cube & add to vegetables
- add 1 teaspoon of mixed herbs & 1/2 teaspoon parsley into saucepan.
- season with salt & pepper to your taste.
- bring saucepan to the boil, then reduce heat.
- simmer until vegetables are cooked.
- blend all the ingredients until smooth.
- enjoy!
