sig's Minestrone
- 2 tbsp olive oil
- 50 grams pancetta (optional)
- 1 onion peeled and finely chopped
- 2 stick celery, chopped
- 2 carrots peeled and chopped
- 2 clove of garlic ,chopped
- 2 potatoes ,chopped
- 1 zucchini, unpeeled ,chopped
- 1 .5 L vegetable stock
- 200 grams greens ( cabbage) finely sliced or,chopped
- 100 grams macaroni or use some soupnoodles
- 1 pinch each salt and pepper
- 1 handful.parmesan shavings
- 1 tbsp sweet paprika
- heat the oil brown pancetta if using ,than add each ingredient one after the other leaving each to cook for fife minutes before adding next one (except the pasta and the cabbage ) ,making sure that you stir and keep an eye on it.
- cook gently for about an hour.
- now add cabbage and pasta ,cook until pasta is cooked.
- adjust seasoning and add paprika,
- serve warm sprinkled with parmesan and drizzles of olive oil.
