AMIEs KALABASA (squash) with AMPALAYA
- 1/4 cup cooking oil
- 2 clove garlic
- 1 medium sized onion, sliced thinly
- 1/4 kg pork meat, in slices
- 1 large ampalaya fruit, cut in diagonal slices
- 1/2 kg kalabasa, cut into cubes
- 1 salt and pepper to taste
- Saute the garlic and onion in hot oil until golden brown.
- Add the pork and season with salt and pepper.
- Cover and cook for 15 minutes.
- Add kalabasa and stir.
- Add ampalaya (more salt may be added if needed.
- Pour in a cup water.
- Cover.
- When vegetables are half cooked, uncover and cook until vegetables are done.
- Serve hot with steamed white rice.
- Share and enjoy!
