sig's Spinach with mild onion sauce on grilled apples
- 400 grams washed spinach
- 150 ml thick cream
- 80 ml rose wine
- 60 grams white onion
- 60 grams butter
- 1 large sweet- sour apple to taste
- 4 tbsp grated parmesan
- Cut the onion into thin slices.Pour wine and cream into a small pot add onions.Gently cook until onions are soft add two tablespoon of parmesan, about 15 minutes.
- in the meantime boil unsalted water add the spinach, after water comes back to boil immediately remove the spinach and drain well.Melt some butter in pan and gently toss the spinach for Bout 2 minutes.
- Add a little salt to taste.
- Cut the apple into 4 slices and core, ( remove seeds and cut out the hard center).
- Fry gently from one side in butter fir about one and a half minute, turn and fry the other sidethe same length of time.
- Season with salt and pepper.
- Add some baking paper to a heat proof dish, add the apple slices, top with a quarter of the drained spinach each, add some onion sauce top with the last two spoons of grated parmesan.
- , heat under grill, serve hot.
