BOU GOU (caribou goulash)
- 1 lb ground caribou or steak cut in cubes
- 1/2 cup chopped onions
- 1 small can mushrooms, drained
- 3 clove garlic, chopped
- 1 large can of Italian style stewed tomatoes, drained
- 1 salt & pepper to taste
- 2 15 oz. cans of tomatoe sauce
- 1 small can tomatoe paste
- 1/2 tsp ground oregano
- 3 bay leaves
- 1 tbsp basil leaves
- 1 22oz bag of elbow macaroni noodles
- brown caribou burger or cubes in a little oil in a skillet
- drain any grease
- add onions, mushrooms, garlic, salt & pepper and cook for 15 to 30 minutes on medium heat until the ingredients are cooked in to the meat.
- in a 2 quart sauce pan, mix stewed tomatoes, tomatoe sauce, tomatoe paste, oregano, bay leaves, and the meat mixture.
- mix thoroughly and simmer for 1 1/2 to 2 hours on low heat.
- boil noodles until done
- rinse cooked noodles thoroughly with hot water.
- mix meat mixture with noodles and stir.
- enjoy your Bou Gou with some good garlic toast!
