Banana Maple Oat Mini-Muffins

  1. Preheat oven to 400F.
  2. In standing mixer, mash bananas.
  3. Mix in, on low speed, all wet ingredients and brown sugar.
  4. Mix in dry ingredients slowly.
  5. Line mini muffin pan, fill to tops of liner with batter.
  6. Drizzle with additional brown sugar, maple syrup, oats and/or thin banana slices.
  7. This step is optional but I did this and it turned out great.
  8. Bake for 18-20 minutes until edges lightly golden brown.
