Banana Maple Oat Mini-Muffins
- 3 medium banana, over ripe
- 2 tsp vanilla extract
- 1 stick butter, melted
- 2/3 cup brown sugar
- 1/3 cup maple syrup
- 1 cup skim milk
- 1 tsp salt
- 1 1/2 tbsp baking powder
- 1 1/4 cup rolled oats
- 1 1/4 cup white whole wheat flour
- Preheat oven to 400F.
- In standing mixer, mash bananas.
- Mix in, on low speed, all wet ingredients and brown sugar.
- Mix in dry ingredients slowly.
- Line mini muffin pan, fill to tops of liner with batter.
- Drizzle with additional brown sugar, maple syrup, oats and/or thin banana slices.
- This step is optional but I did this and it turned out great.
- Bake for 18-20 minutes until edges lightly golden brown.
