Apple Sweet Potato Bake

  1. Place potatoes in a large saucepan or dutch oven; cover with water.
  2. Bring to a boil; cover and cook for 30-45 minutes or until tender.
  3. Drain.
  4. When cool enough to handle, peel and slice potatoes.
  5. Place apples in a large saucepan and cover with water.
  6. Cover and cook over medium heat for 7-8 minutes or until crisp-tender; drain.
  7. Place apples and potatoes in a greased 2 1/2-quart baking dish.
  8. In a saucepan, combine concentrate, 1 1/2 cups, water, sugars and salt.
  9. Combine cornstarch with remaining water until smooth; stir into concentrate mixture.
  10. Bring to a boil; cook and stir 2 minutes or until thickened.
  11. Remove from heat; stir in butter until melted.
  12. Pour over potato mixture.
  13. Bake, uncovered, at 325 for 30-35 minutes or until heated through.
