Macrobiotic Atsuage with Thick Sweet Onion Ankake Sauce

  1. Roughly mince the onion.
  2. Add oil to a pot and stir-fry the minced onion.
  3. When the onion is nicely browned, add the salt, soy sauce, and water.
  4. Now dissolve the kudzu starch in water, add to the pot, and stir until it thickens.
  5. Oil a frying pan, and fry both sides of the atsuage.
  6. Serve the atsuage with the thick onion sauce.
