Poached Fish Creole Recipe

  1. Coat a large skillet with cooking spray; place over medium heat till warm.
  2. Add in onion and green pepper to skillet, saute/fry 3 to 4 min or possibly till tender.
  3. Add in remaining ingredients to skillet except fillets and bring to a boil.
  4. Add in fillets, spooning sauce over fillets.
  5. Cover, reduce heat, and simmer 2 min.
  6. Uncover and simmer an additional 8 to 10 min or possibly till fillets flake easily with a fork.
  7. Yield: 4 servings.
  8. About 125 calories per serving.
