Seafood Casserole

  1. Combine eggs, mashed potatoes, 1/2 cup cheddar, and pepper in a medium bowl.
  2. Mix well, Press into the bottom of a 2 quart shallow baking dish.
  3. sprinkle paprika over the dish.
  4. Set aside.
  5. Melt butter in a large sauce pan.
  6. Add mushrooms and cook until softened.
  7. Sprinkle with flour.
  8. Heat and stir about 1 minute.
  9. Slowly add the milk.
  10. stirring constantly until smooth.
  11. Add wine.
  12. Heat and stir about 10 minutes until it thickens.
  13. To the saucepan add 1 cup cheddar, parsley, season salt and pepper.
  14. Stir until the cheese is melted and remove from heat.
  15. To the saucepan add crab meat, shrimp, and peas.
  16. Bake at for 20 minutes until heated through.
  17. Sprinkle with remaining cheese and bake for another 10 minutes.
