Mex Tex Soup Recipe
- 1 c. minced onion
- 1 c. minced green pepper
- 1 c. minced tomatoes
- 1/2 c. minced parsley
- 2 (10 1/2 ounce.) cans chicken broth
- 1 teaspoon oregano
- 1 teaspoon chili pwdr
- 3/4 teaspoon cumin
- 1/4 teaspoon salt and pepper
- 1 bay leaf
- 1 c. diced, cooked chicken
- 2 tbsp. Cheddar cheese
- Tortilla chips
- Combine first 4 ingredients in a pot.
- Bring to boil.
- Cover; simmer 30 min.
- Remove bay leaf and stir in chicken.
- Cook till heated.
- Pour into 4 bowls.
- Top with 1/2 Tbsp.
- cheese and 2 chips.
