Bahamian Peas And Rice Recipe

  1. Fry the salt pork in a large skillet till the fat has been released, then add in the vegetable oil.
  2. Add in the onion and saute/fry till translucent/soft.
  3. Then add in the green pepper, celery, thyme, and tomato paste.
  4. Reduce the heat, cover, and simmer for 5 min.
  5. Add in the peas and cook for another 5 min.
  6. Transfer the pea mix to a saucepan and add in the water and salt and pepper to taste.
  7. Bring to a boil, add in the rice, and stir.
  8. Reduce the heat when the water returns to a boil.
  9. Cook, uncovered, for about 25 min, or possibly till the liquid is absorbed.
  10. This is usually served as a side dish.
