Crackle Top Sugar Cookies

  1. Heat oven to 350 degrees.
  2. Adjust one rack in the center of the oven.
  3. Combine butter and sugar and beat on medium speed until light and fluffy.
  4. Scrape down sides and bottom of bowl.
  5. Add egg yolks, vanilla, salt and beat until smooth.
  6. Add flour, baking soda and cream of tartar and mix on low speed until dough comes together.
  7. Scoop dough by rounded tablespoons and roll into balls.
  8. Roll balls in sanding sugar to coat and place on parchment paper lined baking sheets.
  9. Bake cookies until they are golden brown around the edges, but soft in the center.
  10. Approximately 16 minutes.
  11. Cool on rack and store in tins.
