Pasta Olivo
- 1 head broccoli, chopped
- 1 yellow pepper, chopped
- 2 zucchini, chopped
- 2 garlic cloves, minced
- 2 tomatoes, chopped
- 34 cup fresh parsley
- 2 tablespoons basil
- 3 tablespoons broth
- 16 ounces rotelle pasta, cooked
- 1 (6 ounce) can black olives
- Spray skill with cooking spray and saute broccoli, zucchini, yellow pepper and garlic for 5 minutes.
- Add tomatoes and saute for 2 more minutes.
- In blender add parsley, basil and broth and blend until fine and moist.
- Add herbs and vegetables to pasta.
- Toss well.
- Garnish with black olives.
