Melonade
- 12 cup lemon juice
- 2 tablespoons caster sugar
- 3 cups roughly chopped watermelon
- 1 12 cups sparking mineral water
- Combine lemon juice and caster sugar in a small saucepan.
- Stir over a low heat until sugar dissolves.
- Allow to cool.
- Place watermelon, in batche in a food processor or blender and process until smooth.
- Strain through a sieve into a large jug.
- Stir in lemon syrup and mineral water just beofre serving.
