Melonade

  1. Combine lemon juice and caster sugar in a small saucepan.
  2. Stir over a low heat until sugar dissolves.
  3. Allow to cool.
  4. Place watermelon, in batche in a food processor or blender and process until smooth.
  5. Strain through a sieve into a large jug.
  6. Stir in lemon syrup and mineral water just beofre serving.
