Potato Samosas
- 2 Tablespoons Vegetable Oil
- 1/2 teaspoons Ginger Powder
- 1/2 teaspoons Garlic Powder
- 1/2 teaspoons Garam Masala Found In The Spice Isle In Most Grocery Stores
- 1/2 teaspoons Turmeric
- 1/2 teaspoons Red-chile Powder
- 2 cups Leftover Mashed Potatoes Plain Or Butter Flavored Work Best
- 13 cups Frozen Peas
- 1/2 whole Lemon, Juiced
- Salt To Taste
- 1 whole Box Frozen Puff Pastry (2 Sheets)
- 1 whole Egg
- Heat the oil in a saute pan over low heat.
- Add the ginger, garlic, garam masala, turmeric and chile powder and allow the spices to toast for 2 minutes.
- In a bowl combine the mashed potatoes, peas, lemon juice, salt to taste, and the toasted spices.
- Cut each sheet of puff pastry into 6 rectangles so you will have 12 samosas total.
- Place 1.5 tablespoons of the mashed potato filling in the center of a puff pastry rectangle.
- Then dip you finger in some water and run along the edges of the puff pastry (this will help it seal).
- Fold the upper left corner rectangle down and press to seal the pastry.
- Then take both corners on the right and fold them over and seal to form a triangle (see above for pictures on how to make the samosas).
- Place the samosas on a baking sheet and brush with egg wash (1 egg and 1 teaspoon water beaten).
- Then bake at 400 degrees (F) for 15 minutes.
