Potato Samosas

  1. Heat the oil in a saute pan over low heat.
  2. Add the ginger, garlic, garam masala, turmeric and chile powder and allow the spices to toast for 2 minutes.
  3. In a bowl combine the mashed potatoes, peas, lemon juice, salt to taste, and the toasted spices.
  4. Cut each sheet of puff pastry into 6 rectangles so you will have 12 samosas total.
  5. Place 1.5 tablespoons of the mashed potato filling in the center of a puff pastry rectangle.
  6. Then dip you finger in some water and run along the edges of the puff pastry (this will help it seal).
  7. Fold the upper left corner rectangle down and press to seal the pastry.
  8. Then take both corners on the right and fold them over and seal to form a triangle (see above for pictures on how to make the samosas).
  9. Place the samosas on a baking sheet and brush with egg wash (1 egg and 1 teaspoon water beaten).
  10. Then bake at 400 degrees (F) for 15 minutes.
